I love fall baking, particularly when it involves pumpkin anything. I’ve made pumpkin mini donuts, pumpkin bread and a few weeks ago, I rounded up some of my favorite pumpkin-flavored breakfast recipes. It should be no surprise that I DO have a favorite pumpkin cookie recipe.
I’ve been making these super-simple pumpkin chocolate chip cookies for years (since before blogs AND Pinterest if you can believe it!). They’re so simple, I truly thought everyone made them. Then, I talked about them on my Instagram stories. Ummm, 45 direct messages later, I am now fully aware they’re not as ubiquitous as I may have believed LOL.
So today, I am sharing the most moist, delicious, SIMPLE TO MAKE, pumpkin chocolate chip cookies you’ve ever enjoyed. Bonus? The ingredients for this recipe are easy to keep on hand and the cookies can be whipped up and served in less than 30 minutes. It makes these tempting little bites a great option for fall cravings OR last-minute company.
Three Ingredient Pumpkin Chocolate Chip Cookies
The base of this recipe is a spice cake mix. My guess is that I originally read about these cookies on the back of a cake mix or something, but I honestly cannot remember. What I can tell you is that I stock up on both spice cake mix and canned pumpkin in the fall when it’s on sale for about $1. When I say stock up, I literally buy a whole case of each, sometimes more. Since I buy on sale in bulk, I can easily make two dozen cookies for less than $3.
You might be worried that you will not go through that much product, but you will. These cookies are THAT good. Besides, the cake mix and pumpkin will stay fresh for a while. I just checked on the ingredients I bought last week and the spice cake and pumpkin have a sell buy date that’s more than two years from now.
The pumpkin in these cookies keep them super-moist. In fact, I can leave them out in the kitchen and they’re still soft and chewy the next day…if there are any left.
Three Ingredient Pumpkin Chocolate Chip Cookies
Ingredients
- 1 Spice Cake Mix
- 1 15-16 Oz Can of Pumpkin
- 2 C. or to taste Semi-Sweet Chocolate Chips
Instructions
- Mix spice cake mix and pumpkin in large mixing bowl. Until smooth.
- Fold in chocolate chips (2 c. or more depending on how chocolatey you like things).
- Spoon dollops of pumpkin chocolate chip mixture onto cookie sheet sprayed lightly with cooking spray.
- Bake at 350° for 15 min. or until cooked through
Quick now, rush out and make these super yummy cookies. You’ll want to enjoy them through Thanksgiving. They’re the perfect bite of fall!
