Summertime is meant for entertaining. If you want a spread that will truly delight, make up a batch of these pesto tortellini skewer appetizers for your guests. They’re the perfect bite of delicious.
I titled today’s post as a “pesto tortellini skewer appetizers recipe.” Technically it could probably pass as a recipe, but if I am being totally honest I am sharing assembly instructions more than anything else. Regardless the headline, these pesto tortellini skewers are worth the share…
I first made these skewers for a neighborhood party. They’re the perfect fresh bite and they flew off the tray. I wish I would have made more! By the end of the evening, I actually had several requests for the “recipe.”
Pesto Tortellini Skewer Appetizers
These pesto tortellini skewers are made with tortellini, skinny pesto, mozzarella and grape tomatoes. This is such a flexible bite, I feel like you could add something new and/or take away any single item (outside of the pesto tortellini) and it would still taste great.
The key to tortellini skewer perfection is a tasty pesto sauce. If you have fresh basil in your garden, or quick access to a farmer’s market, pesto is fairly easy to make. I made this skinny pesto recipe a day ahead and let it marinate in the refrigerator.
Assembly of the skewers is simple enough. Thread tortellini, spinach, mozzarella and grape tomatoes on a medium sized wooden or bamboo skewer and set aside on a tray. I brushed my tortellini skewers with the pre-prepared pesto sauce to keep things consistent and ensure the tray remained neat and tidy, but you could also drizzle the sauce across the skewers.
Since I prepared these for that party, I’ve actually had a craving. I’ve made them several more times in smaller batches. I’ve also tried the skewers with a little grilled chicken to serve over salad for dinner – so good!
