It’s fall and we’re in the midst of celebrating pumpkin everything. It’s only right that I add one of my favorite treats to the mix, so today I am sharing the simplest recipe for mini pumpkin donuts that you will ever come across.
The coolest thing about this recipe is that it calls for only four ingredients – a cake mix, a can of pumpkin, a bit of butter and a bit of sugar.
Really, could it be any simpler? I think not.
30 Minute Mini Pumpkin Donut Recipe
Fold the pumpkin and cake mix together in a large bowl. I like to blend them together with a regular spatula, because it’s simple to use and provides a nice smooth result with no lumps. My favorite is this silicone Tovolo version – it’s dishwasher safe and heat resistant. Winning!
Spoon and/or pipe the mix into a greased mini donut pan. I prefer to pipe the pumpkin mix, because I can easily control the amount of batter used for each donut. Each little circle should only be filled about half way. In addition by piping the batter into the pan, the mini donuts turn out smooth and uniform.
Create your own dispensing bag by cutting the tip off the corner of a Ziploc bag or purchase a box of sturdy frosting bags inexpensively on Amazon.
Truth. About midway through baking my first batch of donuts, I gave up and pulled out my mini donut maker. It’s so easy to use, quick to clean up and the donuts come out perfectly every time.
Rather than a glaze or heavy frosting, I think these donuts taste best dipped in just a bit of sugar. Brush the donuts with melted butter and then roll in sugar. Once coated, your mini pumpkin donuts are ready to go!
