If there’s one flavor that deserves to be the official “sip of summer,” it’s got to be pina colada. There’s nothing quite like it on a hot summer day.
We’ve been making coconut pineapple drinks and icy pops for weeks and I thought it was time to take the sugary-sweet taste to a whole new level and pina colada mini donuts were born…
So when my friend Vanessa suggested a group of us share mini donut recipes on the same day, taking a yum-tastic flavor and infusing it into a donut really wasn’t much of a stretch. Last year’s S’mores mini donuts remain one of the most popular recipes I’ve posted and you can’t miss these lemon poppyseed donuts with blueberry glaze.
Donut Ingredients:
1 c. flour
1/2 c. sugar
1 tsp. baking soda
1 tsp. salt
1/4 c. coconut oil
1/2 c. coconut milk
1 egg
1/4 c. crushed pineapple
Glaze Ingredients:
3/4 c. powdered sugar
1 1/2 to 2 tblsp. pineapple juice
shredded coconut (optional)
Directions:
Preheat oven to 350 degrees and spray donut pan with nonstick cooking spray.
Whisk together dry ingredients in a medium bowl.
In a smaller bowl, whisk together wet ingredients.
Pour the wet ingredients into the dry ingredients and fold together until well combined.
Place batter in frosting bag, or a ziplock bag with the corner snipped off, and pipe into donut pan. Each donut mold should be about two-thirds full.
Bake for 12-15 minutes or until the donuts are firm.
Place donuts on a wire rack to cool.
Mix together glaze ingredients and drizzle over donuts. Top with sprinkles or shredded coconut.

I will put my Food Network Design Star hat on and try to share the taste with you in words…These Pina Colada Mini Donuts are very sweet to the taste. The crushed pineapple and coconut milk provide a bit of the traditional pina colada flavor, while keeping the donuts moist…almost to the point of being a bit crumbly. LOL Does that help? xoxo Tauni
