The scent of this amazing Instant Pot Bacon Honey Mustard Chicken will have your family rushing to the dinner table.
Mmm. There are some dishes that smell so good while cooking every single member of the family comes in to the kitchen to inquire when it will be ready. This Instant Pot Bacon Honey Mustard Chicken is one of those meals.
I actually prepped and cooked the dish while my friend Amy was over. While she didn’t get a chance to actually taste the recipe before it was done, she called for the recipe the next day. It smells THAT GOOD.
Even better? It tastes just as good as it smells. I made the dish for my parents and my Dad loved it so much he asked to take leftovers home. That might not seem out of the ordinary in and of itself, but the next day he called to tell me how much he enjoyed the leftovers and to ask for the recipe. Dad calling for a recipe? That does not happen.
Even better, better? This recipe is made in an Instant Pot, so it cooks up pretty quickly. Yay!
Instant Pot Bacon Honey Mustard Chicken
I start all of my Instant Pot recipes by placing just a bit of water in the bottom of the pot. Since this recipe calls for other liquids, 1/4 cup of water worked perfectly. Once the water is added it’s time to add the other ingredients. I layered chicken, onions, mushrooms and crunchy bacon.
Typically I make this recipe with honey mustard made from scratch. It’s delicious, but it takes a tiny bit more time than my CHEAT. I made this batch of chicken with Newman’s Honey Mustard dressing. I like to add quite a bit to the pot, just make sure that you don’t overfill the pot. The Instant Pot should be no more than 2/3 full.
With more liquid in the pot, it takes a bit more time for the Instant Pot to come to pressure. My pot came to pressure in about 10 minutes. I cooked thawed chicken for 10 minutes and would double the time for frozen chicken. I live at a high altitude in Utah, where the cook time is a bit longer.
With the amount of liquid in the pot, it’s important to allow time for natural release. Trying to use quick release will result in sauce shooting out of the release valve.
I served the Instant Pot Bacon Honey Mustard Chicken over rice and garnished it with chives.
Instant Pot Bacon Honey Mustard Chicken
Ingredients
- 1/4 C Water
- 4 Large Chicken Breasts
- 1/2 C White Onion Diced
- 1.5 C Mushrooms Sliced
- 1 C Cooked Bacon Diced
- 1/2 Bottle Newman's Honey Mustard Dressing
- 4 C Rice
Instructions
- Pour 1/4 C water in the bottom of the Instant Pot.
- Place chicken breasts in Instant Pot. I cut my chicken into large pieces because I knew I wanted to portion it out in advance.
- Place onion, mushrooms and cooked bacon in Instant Pot on top of chicken.
- Pour honey mustard dressing on top of chicken and give the pot a quick stir.
- Set Instant Pot manually for 10 minutes (recipe developed at high altitude, adjust accordingly).
- Allow Instant Pot run natural release.
- Serve chicken over rice.
