Summer Tortellini Salad Recipe

Utah’s weather can be a little crazy…one day it’s 45 degrees, while the next it’s 80. However, you will find that once we’ve had one warm day here, we all pretend that it’s summer. 

Though it was a colder day outside, we’re dining like it’s in the 90’s.

Summer Tortellini Salad

Summer Tortellini Salad Recipe

Salad Tortellini Salad LeftIngredients
Cheese tortellini
Peppers
Grape tomatoes
Summer sausage (you could use something stronger, I am just not a spice girl)
Parmesan cheese
Basil
Italian dressing

Directions
Cook and drain cheese tortellini. (I like to add just a touch of EVOO to the water to ensure that the tortellini noodles don’t stick.)

Chop peppers.

Italian Tortellini Salad Summer SausageMix tortellini, peppers, tomatoes and summer sausage with Italian dressing to taste.

Add a little chopped basil and some grated parmesan cheese.

        Hi Gilly, It’s a cured meat and can be found in the grocery store near the salami and other Italian meats. xo Tauni

      Emily, after I made the salad I thought that it might add some pretty to add yellow, orange or green peppers. Of course, I hate peppers and won’t try it, but if you do let me know ๐Ÿ™‚

      Angie, I buy my tortellini fresh from a local Italian importer, but I wouldn’t hesitate to use frozen from the grocery store in a pinch…I haven’t ever tried dried. Hope that helps. xoxo, Tauni

      I have used dried and fresh, both are perfect. (I add mozzarella cut into cubes, black and green olives) Always get raving compliments when I bring.

    Made this last week and it was a hit! My husband requested to make more and double the recipe so we have plenty of leftovers. Making it again tonight with orange and yellow peppers this time. Thank you for the recipe.

    I’m making this salad for a gathering. How much tortellini, tomatoes and parmesan do I use for 16-20 servings?
