Almond Joy Cookie Recipe

Almond joy cookie recipeOne thing I love about the boys is how thoughtful and willing to share they are. They know that their grandma loves Almond Joy candy bars and every Halloween they save them all up to share with her.

A while back I saw an Almond Joy style cookie recipe and I sort of filed the idea in the back of my brain for the next time we went over to see her.

Rather than using actual Almond Joy bits like I originally saw (probably on Pinterest), I decided to go with something a little different. This cookie was based on a chocolate chip recipe. Give it a try and let me know what you think.

Almond Joy Cookie Recipe

Coconut chocolate chip almond cookie recipeIngredients:
2 1/2 cups flour
1 tsp baking soda
1 tsp fine salt
16 tbl unsalted butter, room temperature (yes it’s a lot, but these cookies are worth it)
1 1/2 cups granulated sugar
2 large eggs
2 1/2 cups sweetened shredded coconut
2 cups roughly chopped almonds
3 cups semisweet chocolate chips

Directions:
Preheat oven to 350 degrees.

In a medium bowl mix together flour, baking soda and salt. Set aside.

Cream butter and sugar together in a large bowl, until fluffy. Add eggs one at a time and mix thoroughly. Once mixed, add flour mixture.

Once you’ve got everything mixed together, add coconut, almonds and chocolate chips.

When I make balls of dough, I like to make sure that the goodies (coconut, almonds and chocolate chips are all neatly tucked inside). Place dough balls on cookie sheet and bake for  10-15 minutes at 350 degrees.

    This recipe looked intriguing but never imagined it would turn out SO well. From some of my family that could not wait, I am told the “dough” is just as good as the cookie. I ended up with almost 5 doz. cookies for an event and I brought none of them home. This is my new favorite cookie.

      Hey Jessica, I think the last time I made this recipe it made about two dozen cookies…it kind of depends on how large you make them. Sometimes I go bigger and it doesn’t stretch as far 🙂 xoxo Tauni

      Sorry. I am in the U.S. and don’t use grams. It’s 16 tablespoons (TBL). I bet there is an online conversion program! Good luck! Tauni

        16 tablespoonfuls is 2 sticks or half a pound
