Hello all…this is Jessica from Pen N’ Paper Flowers and I don’t know about you but it’s peach season here in Florida and I am lucky enough to have a beautiful peach tree in my backyard. Right now, it is exploding with fruit and I’m frantically trying to come up with delicious recipes so as not to waste a single one of these delicious white peaches.
I found a really easy Peach Salsa recipe that’s super delicious and will definitely be a food staple for my family and I this Summer as well as for any entertaining I may do. I just knew you’d want the recipe too for all of those barbecues, pool parties and beach cooler packing you’ll be doing these next couple of months.
FRESH PEACH SALSA
4 medium peaches, peeled and pitted (see this post)
2 large tomatoes, cut into wedges and seeded
1/2 sweet onion, cut into wedges
2 garlic cloves, peeled and crushed
2 cans (4 ounces each) chopped green chilies (or fresh jalapeño)
4 teaspoons cider vinegar
1 teaspoon lime juice
1/4 teaspoon pepper
Baked tortilla chip scoops
In a food processor, combine the first five ingredients; cover and pulse until coarsely chopped. (OR hand-dice the peaches, tomatoes, onions, and garlic). Add the chilies, vinegar, lime juice and pepper. Cover and pulse just until blended. (or stir in remaining ingredients until well blended if you hand-diced the items). Transfer to a serving bowl, cover and chill until ready to serve. Serve with your favorite tortilla chips.
SIDE NOTE: I did not use cilantro in my recipe because one of my children doesn’t prefer it but you could totally add a 1/2 cup chopped cilantro for an added flavor dimension. (it’ll look more authentic too). *wink*
