Hello again SNAP Peeps! It’s me, Jessica from Pen N’ Paper Flowers. Spring is absolutely here in my neck of the woods! I’ve been infatuated with carrots lately. (carrot soup, carrot candy favors, watercolor carrots and a sweet library book I’ve been reading to my five year old entitled Carrot Soup). So…I immediately thought you might love the idea of serving these adorable Spring Carrots at your next celebration.
They are super simple to create and would be perfect as snacks leading up to Easter dinner or as a fun classroom treat for the kids. These are also a darling idea for a Spring baby or wedding shower too!
SUPPLIES YOU’LL NEED
– mini paper cups (often called nut cups)
– mini carrots
– bundle of fresh parsley
– wooden skewer
– ranch dressing or hummus (not pictured)
INSTRUCTIONS
Using the wooden skewer, poke a hole in one end of the carrot. Snip off a sprig or two of parsley and insert the stems into the hole in the carrot. Fill a mini paper cup 1/3 full of ranch dressing or hummus and insert 3 “Spring Carrots”. Serve on a tray or cake plate.
Entertaining Tip:
Make sure your parsley is fresh so that it doesn’t wilt soon after you snip it.
I recommend making these an hour or two prior to your celebration. If you make them the night before you run the risk of the parsley drooping or your carrots drying out depending on your selections. (I guess you could try storing the parsley filled carrots in the fridge, standing on end in a small bit of water. Then you could add them to your hummus or ranch on party day. I haven’t tried this yet so I can’t guarantee the parsley won’t be wilted or the carrots won’t be dried out using this technique – but it sounds like it would work?)
