Those of you who follow me on Facebook and Instagram might now that I recently started on a new journey…I have joined Weight Watchers and I am working to loose some of the weight I gained due to my health issues.
I don’t know why it was so hard for me to join and share with you. Everyone struggles with weight issues of some sort or another during their lives, right? Having said that, I shared with you before I even shared with my own family.
I’ve since shared, but I have been sneaking lower-fat recipes into our rotation. Guess what? No one has noticed and everything I have tried has been a pretty good success.
Today I am sharing a crowd pleaser – “skinny” jalapeño poppers.
Ingredients
12 large jalapeños
8 oz. reduced fat cream cheese
1/3 cup reduced fat shredded cheese (I used Monterey Jack)
2 tbsp chopped green onions
1 tbsp cilantro
1 tsp paprika
1 tsp chili powder
Directions
Heat grill to medium high.
Make a long vertical slice on each of the 12 peppers. Basically, you want to open these up large enough to clean out the seeds and fill the pepper. (Whatever you do, DO NOT touch your eyes…Not fun!)
Mix together cream cheese, 1/2 the shredded cheese, onions, cilantro and paprika.
Fill pepper shells with cheesy filling and sprinkle with the remaining cheese and for a bit more heat, the chili powder.
Place on well oiled grill and cook until filling is completely melted.
Derek is a huge fan of spicy. Me? Not so much. I am always trying to find a happy balance between the more tame foods I like and the heat that he is looking for. This skinny jalapeño poppers recipe provided a happy middle.

These look so good! Yes, I love spicy and thankfully my husband does too. I will give these a try. Most of the jalapeno poppers at restaurants are deep fried. Since I’m gluten-free that is a major problem. I was thrilled to read your recipe and not see any gluten:)

I love broiled or grilled jalepenos! People are reluctant to try them thinking they will be hot. I don’t like hot but love these! I will have to try your way. Too bad they don’t make a skinny bacon to wrap around it! I too have been looking at Weight Watchers. Haven’t jumped in but am considering it.
LOL Diana. Skinny bacon. I bet you could find a lower fat bacon, right? You could also try using bacon bits sprinkled on the top…It would give a bit of the flavor without all of the calories. I know that the key to dieting is finding what really works for you. I have loved WW. In two weeks I am 13 pounds down! I hope I can continue to see success. xoxo, Tauni
Love jalapeno poppers but they’re often too spicy for me. I can’t wait to try these!
Emily, You’re the best commenter…Almost everything is too spicy for me. I think the key is to select a pepper with less heat and then make sure all of the seeds are cleaned out. xoxo, Tauni
