Bacon Potato Leek Breakfast Bake

Ingredients
  

  • 1 lb. Cooked and Crumbled Bacon
  • 2 C. Potato Leek Soup
  • 9 Large Eggs
  • 3/4 C. Milk
  • 1/4 Tsp. Pepper
  • 1 C. Shredded Cheese I like to use a mix of swiss and cheddar
  • 2 C. Sliced Mushrooms
  • Chives

Method
 

  1. Cook Bacon and Drain. Set aside to cool.
  2. Whip eggs, milk and soup together.
  3. Add cheese and pepper to liquid mixture and stir.
  4. Crumble bacon and spread evenly.
  5. Distribute mushrooms evenly.
  6. Sprinkle chives across the top of the dish.
  7. Refrigerate overnight OR place in the oven immediately.
  8. Bake at 375 degrees for 45 minutes or until cooked through.
