Nothing says summer quite like ice cream. Especially, if you live in sweltering temperatures like we do. We have a local ice cream shop that sells the best birthday cake ice cream. My kids go absolutely ga-ga for the stuff! I thought it would be fun to make our own at home. So, we gave it a go and they turned out awesome! Now they say, this is the best thing ever!
Gather your supplies:
Dixie cups
Popsicle sticks
Ice cream
Cake
Buttercream Frosting
Sprinkles
First, cover the bottom of the cup with sprinkles. Then add 2 spoonfuls of your frosting. I used buttercream, because it’s my favorite, but you could use whipped cream also. Spread your frosting, so that the sprinkles are completely covered.
Next, add about 1/2 cup of your frosting to your cake. Mix until crumbly. I used yellow cake from a favorite recipe of mine, but once again, this is a matter of taste. Add cake mixture to the cup. Make sure to pat it down, so it’s nice and packed in there.
Melt your ice cream to the consistency of yogurt and fill the remaining space in the cup. Lastly, insert popsicle stick about halfway down. Allow to freeze over night and then remove paper cup.
