Preheat oven to 350 degrees. Place 18 paper liners in a muffin tin and set aside.
In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt.
In a smaller bowl mix eggs and pumpkin together. Stir into dry ingredients until full bowl of batter is moist.
Fold in peeled, chopped apples.
Fill paper-lined muffin cups about three-fourths the way full.
