Apple Pumpkin Muffins Recipe with Streusel Topping

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 cups sugar
  • 1 cup brown sugar
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 large eggs beaten
  • 1 1/2 cups canned pumpkin
  • 2 cups peeled chopped apples

For the streusel topping

  • 1/2 cup all purpose flour
  • 1/ c cup sugar
  • 2 tsp. cinnamon
  • 5 Tbsp. cubed butter

Instructions
 

  • Preheat oven to 350 degrees. Place 18 paper liners in a muffin tin and set aside.
  • In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt.
  • In a smaller bowl mix eggs and pumpkin together. Stir into dry ingredients until full bowl of batter is moist.
  • Fold in peeled, chopped apples.
  • Fill paper-lined muffin cups about three-fourths the way full.

For the streusel topping

  • Combine flour, sugar and cinnamon. Cut in butter until topping resembles course crumbs.
  • Sprinkle topping over each muffin.
  • Bake muffins at 305 degrees for about 30 minutes, or until a toothpick comes out clean.
