Pour 1/4 C water in the bottom of the Instant Pot.
Place chicken breasts in Instant Pot. I cut my chicken into large pieces because I knew I wanted to portion it out in advance.
Place onion, mushrooms and cooked bacon in Instant Pot on top of chicken.
Pour honey mustard dressing on top of chicken and give the pot a quick stir.
Set Instant Pot manually for 10 minutes (recipe developed at high altitude, adjust accordingly).
Allow Instant Pot run natural release.
Serve chicken over rice.
