Instructions
Preheat oven to 350ยบ.Spray loaf pans with nonstick spray.Mix together sugar and butter. Add eggs, eggnog and vanilla to the bowl and mix until well blended. Mix in remainder of dry ingredients (flour, pudding mix, baking powder, salt, nutmeg), until incorporated. Be careful not to over mix the batter. It should be well-mixed, but not completely smooth. Pour batter into greased loaf pans. The dough will be thick, you will need a paddle to scrape the sides of the bowl.Bake mini loaves for approximately 30 minutes, or until a toothpick comes out clean. Larger loaves will take closer to 45+ minutes. Allow bread to cool before serving or adding glaze.For the glaze: whisk together ingredients and pour over cooled bread. Glaze will harden on cooled bread within 15 minutes.
